You should be allowed to shoot at flock cameras with a pellet gun if you’re standing on your property while doing it. If you can hit the lens from there, it was infringing on your privacy on your property.
In the US you are legally allowed to record anything visible from public property. Meaning the flock cameras could be pointed directly at your house and it’d be legal.

Upgrade that pellet gun to an AR15 and I 100% guarantee we can get conservatives on board.
Apparently a big green laser does the job just well by cooking the sensor
Especially at night when the camera aperture is wide open.
It’s honestly not worth it though, as a laser that big could mess up yours or someone else’s eyes.
