Hey folks, I want to start this off with I was a vegan for about 7 years before. Eventually I started getting sickly due to probably diet reasons and I ended up getting off the wagon for safety reasons.
I’m not sure what I did wrong. But 90% of my food is still vegan. I work a lot, probably more than people should. I’m wondering what your go to quick meal options are?
My quick meal options:
- meal shake/bar. Not sure where you’re from but over here we have Plenny and Huel which are both very complete, incl. vitamins and a huge list of minerals. Not great tasting but very quick, easy and super healthy. I always carry a bar in my bag.
- a bit less complete, less fast but better tasting are veggie meal bags, such as Bonduelle Lunch bowl
- For cooking stuff myself, I enjoy wok with pressed tofu. Get a tofu press, press the tofu overnight in the fridge. I also enjoy meat alternatives like beyond burgers, vegan bapao, etc
There’s really a lot of options.
Outside of vegan stuff, what are your current quick meal options and where do you live?
Yogurt. Granola, soup, salad, tomato pie, roasted veggies, stir fry, baked potato.
I don’t find tofu reheats well. Although getting a press seems better than what I do.
A common quick meal in my house is pasta pesto (with a can of kidney beans mixed in because beans are delicious).
That sounds pretty good.

I think B12 and iron was what hit me. I take a vegan vitamin now.
I should add the only non-vegan foods I eat are cheese and yogurt and egg if it’s baked for me. IE I am not going to say no when our elderly neighbor bakes me muffins.
A lot of vegans also underestimate the volume of food you need to eat too! Not sure if it fits into your lifestyle but make sure you’re eating enough or eat more than you think you need?
Oh gosh I used to need to eat all the time. I lost a lot of weight when I first turned. After the initial fiber overload, I felt pretty good.
